Well my niece is now allergic to just about everything under the sun so we have had to modify the way we cook when having family get togethers.  Soy, rice and potatoes are all on the list.  When you start reading labels, you quickly find just how much soy, rice and potato is in EVERYTHING!  Thank goodness for Coconut Oil.  I decided to do some sweet potatoes as our side and used coconut oil to fry them up.  She ate them plain but I kicked ours up a notch!  Check out my Coconut Fried Sweet Potatoes with Apple!...
