Well, you remember the awesome Vegan Banana Bread I made yesterday right…now time for the real star of the show. Banana Bread French Toast with Homemade Blueberry Syrup!! Yes…it was totally worth the effort in baking the bread…breakfast doesn’t get much better than this!
Banana Bread French Toast with Homemade Blueberry Syrup

Ingredients:
French Toast:

- 1/2 Cup Egg Beaters
- 1/2 Cup Soy Milk
- 1/2 tsp Vanilla Extract
- Cinnamon
Syrup:
- 1/4 Cup Blueberries
- Dash Sugar Free Maple Syrup
- Dash Sugar Free Vanilla Syrup
- Pinch Oat Flour
Directions:
Mix ingredients for French Toast together in shallow pan. Add slices of banana bread into pan and coat. Place in frying pan at medium and cook until browned on one side. Turn over and brown other side
To make syrup: add first 3 ingredients into microwave safe dish. Mircowave for 30 seconds and stir. Microwave an additional 30 seconds. Add a pinch of oat flour and stir vigorously until thickend. Add a very little extra flour at a time if needed to thicken further.
Serve banana bread on a plate with slice bananas and drizzle with warm blurberry syrup!
