BBQ Eggplant Sandwich
So it’s officially “hot” here in Washington State. Contrary to what you might believe about Washington, I actually live in the desert. Yes…hot dry desert on the sunny side of Washington State. Well, today in the “Tri-cities”, we finally had the first taste of summer (after a lot of really cool days not looking like Spring at all) and we hit above 90 degrees. Woo hoo! Well, not quite since we found out our air conditioner is not working and have to wait 8 more days to get it fixed! That being said, I’m looking for something easy to cook up without a lot oven/stove time. So, I turn to a quick and easy BBQ Eggplant Sammie. Brings you right into summertime with the smokey BBQ flavor piled high with grilled onions and vegan cheese. Yum!You must try this one!
BBQ Eggplant Sandwich

Ingredients:

1 Eggplant
-
BBQ Sauce
-
1/2 Sweet Onion
-
Daiya Vegan Cheddar or Pepperjack Cheese
-
Whole Wheat Buns
Directions:
Peel and thinly slice the eggplant. (I used an old meat slicer to get really thin lunch meat pieces)
Throw in frying pan and saute with a little water until softened.
After water evaporates and eggplant cooked thru, add BBQ sauce and let simmer for a few minutes.
In a separate pan, saute your onions until caramelized.
Then just start piling your sammie high!
I like a little extra kick to mine so I use the pepperjack vegan cheese, some jalapeno and vegan mayo too!
