Blackberry Mug Cake with Coconut Vanilla Frosting
Ahh…back home after an amazing weekend in Spokane with my co-workers. Had some great food, with great friends and great conversation. If you haven’t checked out my pictures from this weekend…go to the Facebook Fan Page and check them out…I can’t believe I made it home in one piece with nothing broken! Now that I’m back…it’s back to the recipes. Here is an easy one that is perfect for one of my favorite summer fruits.
Ingredients: Cake
- 1/2 Cup Blackberries
- 3 TBSP Oat Flour
- 1/4 tsp. Baking Powder
- 1 TBSP Sugar Free Vanilla Syrup
- 1 TBSP Soy Milk
- 1/2 tsp. Splenda Brown Sugar
Ingredients: Frosting
- 1/2 Cup Coconut Creamer or Coconut Milk (canned)
- 1/2 TBSP Sugar Free Vanilla Syrup
- 1 TBSP Instant Clear Jel
Directions: Cake
Mix all ingredients together in a bowl. Pour into sprayed microwave safe mug. Microwave for 1 minute and 30 seconds. Cook at additional 30 second intervals until cake is cooked thru. Turn mug upside down on plate and tap the cake out.
Directions: Frosting
Place ingredients into a bowl. Mix with hand blender until smooth and thickened. Spoon onto cake.
