Breakfast or Dessert? Apple Crisp Breakfast Burritos
On a recent episode of “Diners, Drive-Ins and Dives” I caught a glimpse of a apple pie pancake. That little glimpse was enough to get apples and breakfast on my mind. Instead of searching for the details, knowing it probably wouldn’t fit my diet, I decided to brainstorm and create my own breakfast recipe. Wow, I’m really not sure now whether to call this breakfast or dessert…it is so good, I think I will eat it for both! Somewhere between a pancake and a crepe, with warm sweet apple heaven rolled up inside. So Easy too!
Apple Crisp Breakfast Burrito
served with Sugar Free Caramel Soy Blueberry Ice Cream
Ingredients:
Pancake Mix:
- 1 Cup Kodiac Pancake Mix (or instant pancake mix of your choice)
- 1 1/4 Cup Water
Apple Crisp Filling: Click for link to 5 Minute Apple Crisp
Directions:
Mix pancake mix and water in bowl until smooth. Place 1/4 cup mixture into frying pan heated to medium and evenly coat bottom of pan. Cook approximately 2 minutes each side until browned.
Prepare the Apple Crisp as directed
Place a large spoonful in center of pancake and roll into a “burrito”
Serve and enjoy!
