Cold Brussel Sprout Salad

I just love Brussel Sprouts but have been stuck in a rut of eating them roasted.  Well, it’s been in the upper 90’s and we currently have no air conditioning so roasting is just out of the question.  As a matter of fact, I have done very little that requires the stove and absolutely no oven in the last week.

This recipe was inspired by a German friend of mine who lives down the street.  She was telling me about her cold Brussel Spout Salad that keeps for a week in the refridgerator and everyone in the house loves it.  Her recipe uses a smoky meat like bacon and an alternate dressing.  I used what I had on hand and it turned out awesome.  I ate up the whole batch in 2 days myself!

  1. 12 oz. Brussel Sprouts - halved
  2. 1/2 Red Onion - diced
  3. 1 TBSP Horseradish Mustard (spicy mustard - dijon)
  4. 2 TBSP Balsamic Vinegar
  5. 1/4 C. Dried Cranberries or Blueberries
  6. 1/4 C. Fat Free Feta (optional)
  1. Blanch Brussel Sprouts (boil 2 minutes - remove from heat - let sit about 5 minutes in hot water)
  2. Sautee onions in frying pan with a dash of olive oil
  3. When onions are softened, add brussel sprouts.
  4. Sautee in mustard and vinegar - toss until thickened.
  5. Remove from heat.
  6. Add berries and cheese.
  7. Chill.
  8. Serve after salad is cool.
  1. If you would like this dish Vegan, you may leave out the cheese or sub in a vegan cheese such as a pepperjack or mozzarella shread.

This is really so easy and the sprouts have just a slightly soft texture with a bit of crunch when blanched just right.  All the flavors when they sit together to chill, marinate together and intensify.  Next time I might even add a clove or two of garlic into the mix as well.  I may even toss in some bacon flavored TVP! Alternatively, I could totally switch this up and use a white wine vinegar and rosemary….Hmmm…. so many choices!
