Dad’s Favorite Meal – Vegan Father’s Day Dinner

For Father’s Day we always have a nice family dinner at home. Just myself, two girls and my hubby. We cook up his favorite foods and just spend some quality time together. At one point in our lives it would’ve been all about grilling up some steaks and roasted potatoes. Now that we have changed our diets to a healthier vegetarian lifestyle, our favorites has changed.

I thought it would be fun to share with you today what one of my hubby’s new favorites meals are and what we are planning for our Father’s Day Dinner this year.

I think we will start with one of our favorite appetizers; The Caprese. I made these fun Caprese Towers from our favorite tomatoes in the garden – Romas!

Then we will move on to our main course.  To replace the typical steaks, we will have Cheesy Horseradish Potato Crusted Portebellas.  This simple dinner incorporates all the flavors we loved in a prime rib dinner.  The texture of the mushroom rivals that of a tender beef steak, and the horseradish potatoes complement it wonderfully!

We will add a side of Roasted Sweet Potatoes and Brussel Sprouts with Rosemary.  I LOVE this dish and you can really toss in any veggies you like.  Red potatoes, Butternut and Carrots taste wonderful too.
