Easy Cheater Vegetable Lasagna

I picked up a few Red Bell Peppers recently with the intention of making stuffed peppers.  My problem is always trying to come up with something to stuff them with since my hubby is not a big rice fan.  We happen to be pretty low on ingredients in the house so I knew I was in for a little creativity.  While browsing the refrigerator, I stumble upon leftover spaghetti noodles from my daughters meal the other night and a light bulb went on!  I just happen to have everything I need for veggie lasagna except lasagna noodles – but spaghetti noodles should work just fine. Cheater Vegetable lasagna was officially on the menu!

What is cheater vegetable lasagna?  Red bell peppers stuffed with spaghetti, tomatoes, cottage cheese and seasoning.  Check out this super easy recipe.  My kids had a blast trying to guess what was going to be inside, and boy were they surprised!

Cheater Vegetable Lasagna

Cheater Vegetable Lasagna

Stuffed Red Bell Pepper with Spaghetti "Lasagna"

Ingredients
  1. 2 Cups Cooked Spaghetti Noodles
  2. 1 14.5 oz Can Fire Roasted Diced Tomatoes
  3. 1 Cup Fat Free Cottage Cheese
  4. 1/2 Cup Egg Beaters
  5. 1/4 TBSP Oregano
  6. 1/2 TBSP Basil
  7. 3 Large or 4 Medium Red Bell Peppers
  8. Mozzarella Cheese
Instructions
  1. Wash and cut off top of bell peppers, hallow out inside.
  2. Mix in bowl- noodles, cottage cheese, egg beaters, tomatoes, oregano and basil.
  3. Stuff the peppers with the cottage cheese mixture.
  4. Bake at 350 degrees for 30 minutes until pepper is tender.
  5. Remove from oven and place mozzarella cheese over top.
  6. Return to oven and broil until cheese is melted.
  7. Serve.
Notes
  1. This is a very basic form of this recipe. Add in extra veggies, some spaghetti sauce, tvp, etc... to make it your own!

  2. Pictures look good. But I’m confused… Where are the noodles in the actual ingredients and instructions?

    • Thanks for the heads up! First person to notice I left out the noodles!! It is 2 cups cooked spaghetti noodles. I will go back and fix the recipe :)
