Easy Vegan Black Bean Soup Recipe

Beans are an important part of a vegan diet.  They are rich and nutrients, protein and fiber. They are considered a “slow carb” or low glycemic carb, which does not spike your blood sugar and keeps you fuller,  longer.  I have tried a few black bean soup recipes and I tweaked and modified until I came up with this Vegan Black Bean Soup Recipe.

It is rich and creamy, full of flavor and leaves you feeling satisfied. A quick and easy to fix, making it a great weeknight meal!

Easy Vegan Black Bean Soup Recipe

Vegan Black Bean Soup
1/2 C. Chopped Celery
1/2 C. Chopped Carrots
1/2 Chopped Onion
2 Cloves Garlic-Chopped
8 oz. Vegetable Broth
2 Cans Black Beans (rinsed and drained)
1 C. Water
1 Knorr Chipotle Seasoning Cube
1 Knorr Cilantro Seasoning Cub
1/2 tsp. Mexican Paprika

If you can’t find these cubes, go ahead and add some canned chipotle or powdered chipotle and fresh or dried cilantro.  I would guesstimate about 1/2 tsp each.
Saute in pot:  celery, carrot, onion and garlic until softened and browned.  Add remaining ingredients, bring to boil.  Once boiling, reduce heat and simmer for about 20 minutes until everything is thoroughly cooked thru.  Remove from heat and carefully blend with hand mixer or blend together in blender.


The result is a nice creamy healthy soup.  Top with vegan cheese, vegan sour cream, fresh onion and cilantro, salsa or pico salad.
Use your leftovers in omelets, casseroles or a dip for veggies!  YUM

  1. There are no beans in the soup?

    • Oh my! This post has been up for months and even had someone tell me they tried it and loved it…I can’t believe I forgot to put black beans in the ingredient list! Thanks for letting me know and I edited it 😉
