Fava Bean Salad

On a nice spring morning, I took a trip to the local farmers market.  How could I resist these huge green fava beans.  I had never seen or eaten fava beans so I just blindly said, “gimme a pound” and I will figure out what to do with them later.  Well, they should come with some kind of disclaimer about how much time and efffort you will be putting into this big pound of long fava beans to get one small bowl of salad!  BUT…the work was worth it because the beans were delicious and I would do it all over again!
Fava Bean Salad
Ingredients:
  • Fava Beans
  • Roma Tomatoes
  • Red Onion
  • Basil Pesto
  • Fat Free Feta Cheese
Directions:

Remove the beans from the outer pod.

If you are really good, you can pull down the seam to open, but I had to use the knife to help me out.
Next, place the beans into boiling water until outer skin of beans start to wrinkle.  Remove from water and rinse with cold water.  Peel the inner bean out from outer skin.
Steam or boil the beans again until tender.  Serve warm with butter and garlic or cool and use in a salad.
To make the salad, mix all ingredients together in bowl to your taste.
Keep Chilled.

  1. I love fava beans, but must admit I’ve never had them fresh like that. I’m definitely going to keep my eyes open at the farmer’s market this weekend. I’d love to make this salad.
