Healthier Almond Joy Bar Recipe

I am in love with the Healthy Fudge I posted about a week ago!  I can think of so many different ways I can use that recipe in different variations and different applications.  The very first thing that came to my mind after tasting my recipe last week was to make a Healthier Almond Joy Bar Recipe.  The coconut oil is the perfect base to make this treat fabulous!

Healthier Almond Joy Bar Recipe

A healthier version of the classic almond joy bar
Ingredients
  • Bottom Layer:
  • 1/2 Cup Coconut Oil
  • 1/2 Cup Honey
  • 1/2 Cup Cocoa Powder
  • 2 TBSP Light Vanilla Yogurt
  • Top Layer:
  • 1/2 Cup Coconut Oil
  • 1/2 Cup Honey
  • 1/2 Cup Unsweetened Coconut Shreds
  • 2 TBSP Light Vanilla Yogurt
  • Topping:
  • 1/4 Coconut (toasted)
  • almonds
Instructions
  1. Make Bottom Layer:
  2. Warm coconut oil in microwave until liquid
  3. Add honey, cocoa and yogurt.
  4. Pour into pan lined with wax paper
  5. Freeze for 10 minutes
  6. Make Top Layer:
  7. Warm coconut oil in microwave until liquid
  8. Add honey, coconut and yogurt.
  9. Pour over top of fudge bottom layer.
  10. Press toasted coconut and almond into top layer.
  11. Freeze an additional 10 minutes.
  12. Remove from wax paper and cut into squares.
  13. Serve

This recipe is so easy and is so good!  While the ingredients are much healthier than most recipes, remember oil is oil and is still a fat – so eat it in moderation.  Also- honey is a natural sugar, same goes – eat in moderation!  Enjoy!
