Healthier Chocolate Truffle Recipe

I have become obsessed with ideas on things to make with coconut oil.  The stuff is amazing and can be used in so many ways!  So the other day, my sister comes home with these coconut covered date things she got at a food co-op while they were out of town.  They looked a bit unappetizing but they assured me they were super delicious so I tried it and YUM!  My mind immediately went to how I can make them and make them better.  The final product…. a healthier chocolate truffle.  This recipe is actually a take off of my healthier almond joy recipe I posted a while back, just goes to show how many ways you can change up a very simple recipe.  Check it out!  Oh yeah… Umm Mother’s Day is just a few weeks away and all moms love chocolate right (hint hint)

Healthier Chocolate Truffle Recipe

Easy no cook healthier version of a chocolate classic

Ingredients
  1. 1 Cup Deglet Noor Dates
  2. 1/3 Cup Water
  3. 1/4 Cup Fresh Almond Butter
  4. 2 TBSP Cocoa Powder
  5. 1/2 Cup Coconut Oil
Instructions
  1. Soak the dates in water for 10-15 minutes
  2. Puree Dates, Water, Almond Butter and Cocoa Powder until smooth ( I used stick blender)
  3. Add melted Coconut Oil until and mix until well blended and smooth.
  4. Pour into 9x9 baking dish lined with parchment paper.
  5. Chill for 15 minutes in freezer
  6. Remove and scoop with tsp and mold into balls, top with raw coconut if desired.
  7. Return to refrigerator until firm.
Notes
  1. Best to store in refrigerator and serve chilled.

To make my life easier, I now have just pureed a bunch of dates and have them handy for using as sweeteners and in recipes like this.  FYI – I LOVE the puree on my Almond Butter Sandwiches!
