Red Potatoes (cubed)
Butternut Squash (cubed)
Brussel Sprouts (halved)
Garlic (2 cloves or 1 TBSP)
Fat Free Feta to Serve
Chop all Veggies and place in baking dish *
Drizzle with Olive Oil
Add about 1-2 TBSP Rosemary (I like a lot of rosemary - adjust according to taste and amount of veggies).
Add Cracked Pepper (approx 1/2 tsp.)
Toss to Coat
Cover and Cook for 30 minutes at 400 degrees
Uncover and continue to cook for another 20-30 minutes until veggies are tender and browned.
Top with Fat Free Feta Cheese before serving **

**Vegan Option - No Cheese or Replace Feta with Vegan Shreds.
