Simple Roasted Veggies #Vegan Option

It seems like the busier I get, the harder it is for me to plan out dinners.  Hmmm…. I bet most of you know exactly what I’m talking about.  This dinner is one of those that just got thrown together with whatever I had left that was still good in the refridgerator.  Sometimes those actaully end up being the best meals of all!  I love to experiment and see what happens when you throw stuff together.  Roasted veggies is always a simple and safe route  to go.  Potaotes, squash, brussel sprouts, carrots, etc… they are all wonderful!

A simple dinner thrown together with whatever you have on hand!

  1. Red Potatoes (cubed)
  2. Butternut Squash (cubed)
  3. Brussel Sprouts (halved)
  4. Garlic (2 cloves or 1 TBSP)
  5. Sweet Onion
  6. Olive Oil
  7. Dried Rosemary
  8. Cracked Pepper
  9. Fat Free Feta to Serve
  1. Chop all Veggies and place in baking dish *
  2. Drizzle with Olive Oil
  3. Add about 1-2 TBSP Rosemary (I like a lot of rosemary - adjust according to taste and amount of veggies).
  4. Add Cracked Pepper (approx 1/2 tsp.)
  5. Toss to Coat
  6. Cover and Cook for 30 minutes at 400 degrees
  7. Uncover and continue to cook for another 20-30 minutes until veggies are tender and browned.
  8. Top with Fat Free Feta Cheese before serving **
  1. *Add any veggies you have on hand - anything goes in this recipe!
  2. **Vegan Option - No Cheese or Replace Feta with Vegan Shreds.
