Simply Shredded Potatoes

Sometimes simple is the best.
When I want a really easy and delicious breakfast, I turn to something like this.
 Something so comforting about warm hash brown potatoes for breakfast.
Not much more to be said…just Mmmm.  Enjoy!

This is the perfect time to break out your food processor.  Shred up whatever potatoes (peeled) you have left over.  I used russet potatoes, but red potatoes are really great too!  Cut up some sweet onion and toss it into a frying pan with a little bit of oil.  Add some cracked pepper and any other seasonings you like and saute until cooked thru and slightly crispy.

 

Serve it as is or add a side of BBQ sauce, gravy, Tabasco or even horseradish! Pair it up with an egg beater veggie omelet and you got a breakfast that can’t be beat!
