Smart Dog Panini

Smart Dog Paninis!
What do eat for a quick and easy lunch as a vegetarian? Salad? Cold Veggies? Been there done that.  I eat the same breakfast everyday, so I really am in need of more variety when it comes to lunch and dinner.  Lunch I have always found the hardest.  Leftovers are good, but many days I don’t have any.  So, this left me looking for more easy options that can be quickly prepared and easily warmed up at work.

I have to admit I was really skeptical about “Veggie Protein Links.” But, I have to say after my first attempt…I’m hooked.  Even my daughter ate them right up, which is surprising, considering how picky she can be.  So simple, soooo good!

I tried the smart food brand and decided to make mine a bit more “gourmet” by making mine panini style with my vegan jalapeno artichoke spread.  Per package instructions, boil water, turn off heat and place smart dog into boiled water for 2 minutes.  Afterward, I simply placed on my bun with my artichoke spread, threw it onto the panini press for 2 more minutes.  Wah Lah….Lunch is served!
