South West Veggie Wrap

One of my favorite things to order at Cousins Restaurant is their Southwest Chicken Wrap.  It is so good! But once again, now that I’m not eating meat or full fat cheeses and dairy, another one of my favorites has been blacklisted.  So today I set out to make a vegetarian version that would out do the Cousins version. 
 Today I created the “South West Veggie Wrap”
Ingredients:
  • Diced Roma tomatoes
  • Diced red onion
  • Fat free feta cheese
  • Thinly sliced/shredded iceburg lettuce (2 Cups)
  • Sliced Olives
  • Bacon Flavored TVP
  • Franks Buffalo Sauce (1 tsp)
  • Vegan Mayonnaise (1 TBSP)
  • Tortillas ( I used sun dried tomato tortillas)

Directions:
Mix first 6 ingredients into a bowl in whatever ratio you like totally approximately 2 Cups.
To make dressing, mix together 1 TBSP Vegan Mayo with 1 tsp. Franks Buffalo Sauce.  Mix Dressing in separate dish and then add to salad mix.
Place on Tortilla and wrap it up!  Makes 2 small wraps or 1 large wrap.

I loved this recipe so much I ate the wrap and then went back and finished the leftovers as a salad.  Very low fat and healthy. Quick and easy for lunch or snack.  I served mine up with my Avocado Salad.  Look for that recipe soon!!
