Spicy Fire Roasted Pico de Gallo Salad

One of my favorite recipes is my Pico Salad. It is so easy to put together, gets better the longer it sits around, tastes awesome, can use it for so many dishes and it is uber healthy!  I first created my recipe trying to replicate the pico slaw you get in Mexican restaurants, but I didn’t want it so dry.  I was looking for more of a salsa feel.  It is awesome with chips, (I have found some rockin’ Falafel Chips that are way better for you), but I soon found out I was using it in everything.  Try it out and you’ll see, I will bet you will be putting it on everything too!

Ingredients:
  • 3 Cups Ready Made Cole Slaw
  • 1 14.5 oz. Can Fire Roasted Tomatoes with Chilies
  • 1 Small can Diced Chilies
  • 3/4 Cup Red Onion Diced
  • 1/2 Cup Cilantro Chopped
  • Green Onion (about 3 stems chopped)
  • Lime juice (1/4 Cup)
Mix all together in large bowl, sprinkle a little ground red chili pepper or add jalapenos if you like it a bit spicier. Let sit.  The longer it sits, the more the flavors blend and intensify.
Look for “Flamous Falafel Chips” They are AWESOME!
Way better for you than a torilla chip too.
