Spinach Salad with Kale Pineapple Mango Dressing

If you are a fan of juicing and smoothies, then you will love this easy salad dressing!  This actually just happened after juicing all my leftover fruit for my Smoothies-to-Go-Go.  I had just a bit leftover after filling up my smoothie cups so I just tossed them all together.  When it came dinner time, I still had this “leftover” batch sitting in the fridge…as it happened, right on top of my package of spinach.  Yes…LIGHTBULB ON!
Super easy Spinach Salad with Kale Pineapple Mango Dressing was born!

Ingredients:
Dressing:
  • Juiced Kale (or very well blended)
  • Juiced Pineapple
  • Juiced Mango
  • Optional: Olive Oil
Salad:
  • Baby Spinach
  • Diced Red Onion
  • Diced Tomato
  • Almonds
  • Dried Cranberries
  • (I didn’t have any but green apple and white beans would be awesome with this!)

To Make Dressing:

Blend juices together in desired ratio ( I used 2 parts pineapple to 1 part Mango and 1/4 part Kale), adjust to taste.

*If you like a creamier/smoother texture, add a little bit of Olive Oil and mix well

Pour over your salad and enjoy!
