Sugar Free Caramel Soy Blueberry Ice Cream and Bananas and Cinnamon Torta

We finally have had a few days that felt like Spring.  In fact, it was actually hot! Well 80 degrees isn’t actually that “hot” for the tri-cities, but compared to the lousy weather we have been getting…80 degrees certainly felt “hot”.  Hot enough to break out the soft serve ice cream maker!  This was my first attempt at making an ice cream with healthier ingredients than the called for heavy cream and half and half.  I have to say, I much prefer this version.  Tastes so much lighter, almost like ice milk. Mmmm! Since I made this, I have put it on just about everything, but the best is perched upon this delicious Torta with bananas.
Sugar Free Caramel Soy Ice Cream
with Bananas and Cinnamon Torta
Ingredients:
  • 1 Cup French Vanilla Soy Coffee Creamer (I used Silk Brand)
  • 1 TBSP Sugar Free Caramel Syrup
  • Pinch of Salt
  • 1/4 Cup Blueberries
  • 1 Banana
  • Ready Made Tortas

                          

I found these amazing Ines Rosales Tortas at my local Health Food Store.  Highly recommend these!

Directions:
Mix together Creamer, Sugar Free Caramel Syrup and pinch of Salt and place in soft serve ice cream maker. (We have a small Hamilton Beach Brand).  After about 5 minutes it should be thick enough to remove and place into a bowl.  Stir in blueberries.  Place sliced bananas on top of Torte and top off with your fresh ice cream.  Enjoy!!

    • I love bananas and blueberries together too! I not real knowledgeable on cooking gluten free but if I think of any suggestions I will let you know.
