Vegan Cheeseburger Soup
You know me, when I see a good recipe… my mind is quickly figuring out how to make it healthier and vegetarian. This is exactly what happened when I stumbled upon this Cheeseburger Soup Recipe at The Better Baker. She has a healthier version, but I still needed to make it Vegan… YUM is what I got to say about the results. A rich creamy soup perfect for a cold winters day… which we seem to be having day after day after day!
Not only is it delish, it is so easy too! You can have this ready for the family in no time. Even the kids could manage to put this together!
Vegan Cheeseburger Soup
- 1 Onion
- 1 Package Morningstar Meat Crumbles 12oz.
- 2 Cups Vegetable Broth
- 2 Cups Soy Milk
- 2 Cups Cubed Potatoes
- ½ tsp Pepper
- 1 Package (7.1 oz) Daiya Vegan Cheese – Jalapeno Garlic Havarti Wedge
- Saute onions in a pot until softened.
- Add Crumbles and Brown.
- Add Broth, Milk, Potatoes, and pepper. Let simmer until potatoes are tender.
- Add in cheese and stir until melted in and combined.
- Serve!
*Note- this is a very basic recipe and much can be added to mix it up.
Change the cheese or add corn, tomatoes, bean… whatever. Have fun with it!
