Vegan Sweet Potato Shepard’s Pie Recipe

It’s cold outside. Flu season is here and it is time for some good comfort food.  Who grew up eating Shepard’s Pie?  Well, it is one thing that had to give up since becoming Vegetarian… until now.  I have recreated this classic comfort food and made it healthy and Vegan!  Substitute the traditional beef with Seitan and the full fat potatoes with spiced up sweet potatoes and you got a hearty and nutritious meal.

Vegan Sweet Potato Shepard’s Pie

  • 2 Sweet Potatoes
  • 2 TBSP Soy Milk
  • 2 TBSP Vegan Butter
  • Pepper to taste
  • (chipotle seasoning optional)
  • 1/2 Onion – Diced
  • 2 Small Summer Squash – Sliced
  • 1 Small Zucchini – Sliced
  • 1/2 Cup. Chopped Red Bell Pepper
  • 1 Cup Beef Seitan
  • 1 Cup Vegetable Broth
  • 1 TBSP Flour
  • 1 TBSP Vegan “Beef” Broth Seasoning
  1. Potatoes:
  2. Boil sweet potatoes until soft. Drain. Add butter and flour and mash until smooth.
  3. Veggies:
  4. Saute the veggies until browned.
  5. Wisk flour and beef seasoning into Veggie Broth.
  6. Slowly pour broth mixture into pan with vegetables, stir.
  7. Remove from heat.
  8. Shepards Pie:
  9. Spread the mashed sweet potatoes over the veggies and place pan into oven at 350 degrees for 30 minutes or until veggies cooked through and sauce is thickened.
  10. Serve.
