Vegetarian Reuben Sandwich Recipe

With St. Patrick’s Day right around the corner, I started thinking about Reuben Sandwiches.  One thing I loved when I was not eating Vegetarian.  Now with the options of  Vegetarian “meats” available, I can still indulge in this Irish tradition!  

Sauerkraut is not only a must have companion for this Reuban Sandwich Recipe, but a healthy edition too!  It is known to be a immune booster, cancer and flu fighter, and full of fiber digestive aid. I actually never tried sauerkraut before I had a Reuben Sandwich so I was a bit skeptical of my first one, but I love the tangy taste of it with the saltiness of the meat with a little bit of spice from some Horseradish.

  1. Cracked Wheat Sourdough
  2. Yves Brand Vegetarian Pastrami
  3. Laughing Cow Light Cheese
  4. Sauerkraut
  5. Horseradish
Instructions
  1. Toast the Bread
  2. Spread Cheese
  3. Add Horseradish
  4. Top with Sauerkraut and Pastrami
