What’s for Lunch?

Paninis have grown in popularity over the last few years and have become a staple in our diet.  With so much variety in the sandwiches you can create, it never gets boring. 

As defined on Wikipedia, a Panini (Italian in origin) is actually just a small bread roll.  More commonly a small sandwich on a bread roll.  Sometimes it is grilled.

We tend to use the term now more often to describe a grill pressed sandwich on any variety of breads.  Our favorite is hummus and veggies on whole wheat bread.  You can purchase a “panini” press, or grill presses (like the george foreman grill) to make it quick and easy.  If you don’t have one you can simply use a frying pan and use a spatula to apply pressure, you just wont get the fancy grill marks!

Roasted Red Pepper Hummus, Red Onion, Lettuce, Roma Tomato, Daiya Vegan Cheddar Cheese.

Other great toppings to try:  eggless egg salad, faux tuna salad, olives, feta, spinach, eggplant, squash and zucchini.  Use your imagination.  Try a “minini” on a small roll or english muffin too for breakfast…you will have fun with the endless possibilities.
