Zucchini Pasta with Avocado Pesto and Grilled Summer Squash Recipe

I, like everyone else around the holidays got into a bit of a food funk.  Lured by all those sugary processed snacks that everyone brings to you to say, “Merry Christmas”.  Not only that, we have been eating out a lot…especially with vacation.  Now, with the new year…comes new goals.  Get back to healthy home cookin’.  I’ve got just the way to start!

This dinner is so easy and so good.  Perfect for the after holidays, get back on the wagon, healthy eating goals!  Yes, it’s fast, easy, healthy, raw, vegan/vegetarian, and best of all… DELICIOUS!   Try this zucchini pasta with avocado pesto and pair it with grilled summer squash, you won’t be sorry!

Making this is so simple, it is hardly a recipe at all!

Zucchini Pasta with Avocado Pesto and Grilled Summer Squash Recipe

Serves: 2
Ingredients
  • 1 Medium Zucchini – grated/cut into long skinny strips
  • 1 Avocado
  • 1 TBSP Pesto Sauce
  • 1 Summer Squash – sliced to grill
  • Olive oil
  • Pepper
  • Fresh Basil
Instructions
  1. Blanch the zucchini in hot water for about 30 seconds to soften
  2. Drain and pat dry
  3. Mash the avocado and stir in the pesto sauce
  4. Lightly grill the summer squash with a little olive oil and pepper ( I used a panini press)
  5. Top with a little fresh basil to garnish
