Zucchini Stuffing Bites
Once again, this recipe came up when I had some zucchini that needed to be used and I had way too much! I love zucchini bread, but you can only eat so much…so I decided to get creative and do something a bit different. I actually started by making these into meatballs, but couldn’t get the right consistency, so I transformed them into zucchini stuffing bites instead! I could eat these all day long, make a great snack or even breakfast on the run!
Ingredients:
- 1 Cup Chicken Flavored TVP (Soak in 1 Cup Water for 10 minutes)
- 1 Medium Zucchini (peeled and shredded)
- 1/4 Cup Onion, Diced
- 1/4 Cup Egg Beaters
- 1/4 tsp Poultry Seasoning
- 1/2 tsp Garlic Powder
- 1 Cup Breadcrumbs
- 1/4 tsp Ground Pepper
Mix all ingredients together in bowl. Add more breadcrumbs if needed to reach correct consistency (should form into a ball easily, not too sticky). Roll into small balls and place on baking sheet. Bake at 350 degrees for 15-20 minutes until cooked through and browned.
