Microwave Zucchini Mug Cake Done in Under 2 Minutes!
I have seen all sorts on “pins” and “posts” on mug cakes, but never really stopped to check them out. However, they always seemed to stick in the back of my mind as something I needed to try. Problem is when I started looking, it was always the standard cake ingredients that don’t work for my healthy veg lifestyle so I just quit looking! Well, one day I had a bunch of shredded up zucchini just looking for a place to be used. I didn’t have enough for a big loaf of bread….and that’s when it hit me….this was what I needed to invent my own mug cake…Healthy Veg Style!
Ingredients:
- 1 Cup Grated/Shredded Zucchini
- 3 TBSP Oat Flour
- 1/4 tsp Baking Powder
- Pinch Salt
- 1 TBSP Sugar Free Vanilla Syrup
- 1 TBSP Soy Milk
- 1/2 tsp Cinnamon
Directions:
Mix together all ingredients in a bowl. Pour into greased 12 oz. Mug
Cook in Microwave for 60 seconds. Check.
Microwave an additional 15 seconds until done
(toothpick inserted comes out clean)
Remove carefully from mug and top with a few fresh shreds of zucchini. It turns out so rich and creamy…almost like a bread pudding with the chewy zucchini texture. YUM. Enjoy!
