Funfetti Cake Batter S’mores

So I have discovered since I made the “healthier” Funfetti Cake Batter Dip, I can do so much more with it than just dip!  It is campfire season and S’mores are a must.  But when you run out of marshmallows you improvise.  I decided to pull out the cake batter dip and slap on a big spoonful with the chocolate on the graham cracker and OMG!!! Pure Bliss!!!   Yes, I do have a weakness for cake batter so I think anything that tastes like cake batter is just heaven, but these were actually really good.  I...

S’mores Cones

OK, this isn’t a “healthy” treat but it is a FUN treat for the kids to make and you can switch up your ingredients to make it a healthier snack  We actually planned on making these while camping over my sisters birthday but we couldn’t wait and just decided to test them out at home using the microwave instead, lol!! I stumbled upon this idea on Pinterest a long time ago and the idea just stuck with me.  It was really a lot of fun doing this with the kids!    S’mores...

Healthier Funfetti Cake Batter Dip – Party Time

I have seen lots of variations on cake batter dips but when I stumbled upon the Red Velvet Cake Batter Dip from Craft Craving, I knew I had to try my own version.  This recipe is so simple and is much healthier than eating the actual cake.  It is so rich you only need a small serving to satisfy your cravings. I usually try to stay away from processed foods, but this is definitely one of those “special treats” that you might allow from time to time.  I stuck fairly close to the original recipe for my first time, but I...

Inspired – Coconut Limeade Slushie

I love browsing the recipes at Foodie Friends Friday.  So many of them are actually healthy vegetarian recipes, even if that’s never what the writer intended!  One of the recipes I found recently that inspires me is from Give Peas a Chance.  From the blog name, you can guess that you might find more healthy recipes over there.  This recipe for a Coconut Limeade Slushie caught my eye right away.  I love that combination of subtle sweet coconut with a punch of bold lime.  It’s a twist I love on a Pina...

Healthier Chocolate Truffle Recipe

I have become obsessed with ideas on things to make with coconut oil.  The stuff is amazing and can be used in so many ways!  So the other day, my sister comes home with these coconut covered date things she got at a food co-op while they were out of town.  They looked a bit unappetizing but they assured me they were super delicious so I tried it and YUM!  My mind immediately went to how I can make them and make them better.  The final product…. a healthier chocolate truffle.  This recipe is actually a take...

Simple Vegan TVP Tacos

What can you feed the meat eaters when they come to visit but stick to your diet?  Easy!  Try simple vegan TVP tacos.  Never had TVP (textured vegetable protein)?  Well it is a dehydrated soy product that you can find in different flavors including chicken, sausage and beef.  For this recipe, if you can use plain, unseasoned TVP as it tends to pick up flavor in what you rehydrate it in, so the taco seasoning does more than a good enough job.   This is actually a lot faster than cooking with real beef as it...

Seattle VegFest 2013 – New Food Finds

On a recent trip to Seattle, I just happen to stumble upon VegFest 2013.  I had never been to one, so I thought I for sure needed to get up and see it.  Little did I know, this little gathering is very popular here in Seattle and I had to wait in a very long line to get in despite showing up 15 minutes before the door opened!  I knew then, I was going to find some great new things. Vegfest primarily is made up of food vendors – both Vegetarian and Vegan options.  Many of them new start-ups local to the Northwest area....
